A Year to Capture: Haircuts, Cupcakes, and Big Lots

Don't you just love that title?!?! :-)

Wow another week gone by and the weekend is almost here! It's also the beginning of Spring Break for our local schools so everyone is making big plans. We on the other hand will continue on with our lives as usual since we have no school age kids yet and Eric will still be working. I do have plans to make a day trip with the kids next week and hopefully some friends and family will be joining us. The weather has been perfect here the past few days and we are LOVING every minute we spend in the sun.

Last Saturday I made a last minute decision to go get my hair chopped off. I needed something a little easier to style and it will also be cooler for the summer. This isn't the best picture to show off the cut since I just put gel in it and let it air dry, but hopefully you get the idea of how it looks.



Olivia was begging for a cupcake this week so when we went grocery shopping on Tuesday I picked up a few things to make them myself. Olivia and I made them on Wednesday so we could take them to church that evening to share with her preschool class. We had a blast making them together!! I love that she is old enough to bake/cook with now.

And eating them too :-)

I was a slacker this year when it come to celebrating St. Patrick's Day. I had grand plans to eat lots of green food, but the only green thing we consumed yesterday was chives on our baked potatoes at lunch and lettuce on our sub sandwiches. :-) We did all wear green though and that was enough to keep us from being pinched.

We also went to visit my mom and sibling yesterday. My mom and I attended a ladies bible study and they are walking through the book of Esther. It was a wonderful time in the Word and a welcome time of fellowship for me since I rarely get to attend a bible study.


I have recently become addicted to Big Lots. I know it's crazy but I go there like every week now. Sometimes I don't find anything, but most of the time I walk out with something in my hand. Today the kids stayed with Eric's mom while I went to a dentist appt and did a little shopping. I had a few minutes to spare before I meet Eric for a lunch date so I ran in for a few minutes. I scored in the food isles! I've been wanting some new seasoning for grilling and these looked good and were priced very reasonably. The Annie's mac and cheese was also a great find. The food coloring was just something I needed. I think I have found a new love although TJ Maxx still has them beat. :-)

Our Menu Plan: Jan 9-15

Snow is falling outside my window as I type this. This is our first snow fall of the year and we have several inches fall overnight. I'm enjoying this quiet day at home and snuggling with my babies. Hopefully Eric will join us later this afternoon!!


Breakfast:

Sunday- Church

Monday- Eggs and cereal

Tuesday- Pancakes and bacon

Wednesday- Cereal and yogurt

Thursday- Cinnamon toast and ham

Friday- Fried eggs and toast

Saturday- Biscuits and gravy

 
Lunch:

Sunday- Family Dinner w/ Eric’s parents

(Tacos w/ 7 layer dip and chips)

Monday- Saturday- Sandwiches, Baked Potatoes, Wraps, Leftovers, or Mac and cheese w/ fruit and chips


Supper:

Sunday –Scrambled eggs and toast

Monday – Some kind of soup…I had planned Fajitas but it snowed last night and made me want soup instead.

Tuesday- Eat with my parents (Roast w/ sides)

Wednesday – Creamy chicken noodle w/ broccoli

Thursday – Sloppy Joes w/ French fries

Friday – Spaghetti w/ garlic bread

Saturday – Out of town for niece’s birthday


Snacks:

Friday- Tacos w/ rice and refried beans

Snickerdoodles

Snickerdoodles

Dough:

2 ¾ cups flour

½ tsp salt

2 tsp baking powder

1 cup (2 sticks) unsalted butter

1 ½ cups sugar

2 large eggs

1 tsp vanilla extract


Topping:

1/3 cup sugar

2 tsp cinnamon



Pre-heat oven to 400. Combine flour, salt, and baking powder and sift. In mixer, cream butter and sugar. Add eggs one at a time, beating well after each addition. Beat in vanilla. Add flour mixture to mixer, and beat just until incorporated. Shape dough into balls and roll them in cinnamon-sugar topping. *If dough is to soft to form into balls, cover and refrigerate until firm. Grease cookie sheets and bake for 8-10 minutes. Yields: approximately 35 cookies

We are going on our family vacation next week so I'm only planning meals this week. The two week shopping trip and menu seems to be saving us money so far and I enjoy staying out of the stores as much.

Tuesday- English muffins w/ strawberry freezer jam

Wednesday- Pancakes

Thursday- Oatmeal or cereal

Friday- English muffins

(Steak w/ baked potatoes, salad, and garlic toast)

Monday – Breakfast for dinner (eggs, sausage, hashbrowns, biscuits, and gravy

I went grocery shopping last night and bought 2 weeks worth of meals. I've been wanting to try this and see if it helps to save on our grocery budget.

We have had a busy weekend and I'm planning to staying home a lot this week. We are having friends over for supper tomorrow night and I'm looking forward to their company. I really need to come up with a nice dessert to serve with our meal so if you have any ideas let me know.




My sweet boy has been a trooper this weekend and has endured the long car trips quite well. He is working on getting two more teeth on the top and it has made him a little uncomfortable but not that fussy.

We plan on staying inside or in the pool this week since temperatures will be in the 100's this week. So after I mow the yard tonight it's back in the air conditioning for me. :-)

Menu Plan for June 20-26

I hope you all had a wonderful weekend!! We stayed close to home Saturday and worked in the yard. I also went grocery shopping/ Father's day shopping and Eric took his boat out and did a little fishing. The heat here in our area is almost unbearable these days so a few dips in the pool were also necessary that day. :-)
I have a ton of pictures from all that we have been doing these days so plan to come back soon when I get them up!!

This post is a little late today because my grandfather (my mother's father) passed away this weekend and the funeral services were this morning. Please keep my family in your prayers.

Menu Plan for February 8-14

My day is going by really fast so it took me a little while to get my menu up, but here it is finally. You will notice that I'm including lots of potatoes in our menu this week. I bought a 10lb bag for $0.20 a pound last week and we need to use them before they go bad. Our menu this week is based off of the 200 Challenge that I joined at Clay in His Hands.
