Menu Plan for August 22- August 28

I few of the recipes I have included this week are new to me and I plan to post the recipes with links soon!!

Breakfast:

Sunday- Strawberry Bread w/ strawberry butter

Monday- Scrambled eggs w/ sausage cheese muffins

Tuesday- Banana Nut Muffins or French toast

Wednesday- Sausage Cheese muffins w/ fruit

Thursday- Oatmeal w/ toast and jelly

Friday- Fried eggs and biscuits

Saturday- Cinnamon Rolls


Lunch:

Sunday- Family Dinner w/ Eric’s parents

(Roast w/ carrots, potatoes, corn, green bean bundles, butter beans, and biscuits)

Monday- Friday- Sandwiches, Baked Potatoes, Wraps, Leftovers, or Mac and cheese w/ fruit and chips


Supper:

Sunday –Popcorn

Monday – BBQ chicken sandwiches w/ potato salad and peas

Tuesday- Dinner w/ my parents (Chicken and dressing)

Wednesday – Pinto beans w/ squash, potatoes, and cornbread muffins

Thursday – Spaghetti w/ salad

Friday – Taco Pie w/ refried beans and corn

Saturday – Out


Dessert:

Peanut Butter Pie


Snacks:

Cookies, popcorn, fruit or yogurt


Baking:

Banana Nut Muffins

Homemade Bread

Homemade Cinnamon Rolls


Kitchen Prep:

Sunday- Lay out chicken to defrost

Monday-Put chicken in crockpot, make potato salad, bake banana muffins, make peanut butter pie

Tuesday- Make cornbread dressing, swell beans

Wednesday- Put beans in crockpot, bake bread, lay out ground beef to defrost

Thursday- Cook ground beef, chop up salad

Friday- Make cinnamon rolls (1 batch for Saturday and 1 for church)

Saturday- Free

Kids in the Kitchen

While I was babysitting my niece and nephew's last week we got in the baking mood.

A-girl was my little helper. She was really in to the whole domestic thing and had her apron on and everything!! :-)


E-dude liked to show off for the camera. He was our all-time best bowl "licker!"




I think the kids agreed that they were YUMMY!!

No Bake Cookies

No Bake Cookies

1 stick of butter
2 cups sugar
2 Tbsp cocoa
1/2 cup milk

Bring all of the above ingredience to a boil and let boil for 1 1/2 minutes. Remove from heat and add

1/2 cup peanut butter
1 tsp vanilla
2 1/4 cup quick oats

Mix together and drop individual cookies onto wax paper. Let cool and enjoy!!

Baking Day: Day 1 Finished!!!

Well here is the finished products of yesterday's freezer cooking/ baking day. The only thing I didn't finish on my list for Wednesday was the waffles. But after many hours in the kitchen (plus some house cleaning I also accomplished) I decided to call it a day. I plan to make waffles for supper soon so I will triple the batch then and freeze the extra. Having a 1 year old and being 34 weeks pregnant can definitely drain you so I had to pace myself. I plan to be back in the kitchen tomorrow doing a little baking for our Thanksgiving dinner with my family this weekend!!

November Freezer Cooking/Baking Day

It looks like everyone is cooking up a storm this week!! Crystal at Money Saving Mom and Jessica at Life As Mom are hosting a Freezer cooking/Baking day today and tomorrow. While everyone else is starting their freezer cooking today, I'll begin mine tomorrow and finish Friday. I did my shopping for the month today so my pantry is stocked and ready to go. Here is a list of what I hope to accomplish.
Baking List:
  1. Pinto beans for the freezer
  2. Refried beans for the freezer
  3. Rice for the freezer
  4. Waffles for the freezer (x 2)
  5. Cooked chicken for the freezer
  6. Cooked hamburger meat for the freezer
  7. Hamburger patties for the freezer
  8. Chocolate chip cookies
  9. Heath bar cookies
  10. Peanut butter cookies
  11. Deviled eggs

Master To-Do List:

Wednesday-

  1. Soak beans overnight (Tuesday night)
  2. Soak rice overnight (Tuesday night)
  3. Put beans in crockpot
  4. Put rice in rice cooker
  5. Put chicken in crockpot
  6. Mix up waffle batter
  7. Start baking waffles
  8. Fry up hamburger meat
  9. Make up hamburger patties and flash freeze
  10. Do a quick clean up
  11. De-bone chicken and chop up
  12. Make refried beans
  13. Bag everything up for the freezer
  14. Clean up

Friday-

  1. Defrost cookie dough in freezer (Thursday night)
  2. Boil eggs
  3. Mix up chocolate chip cookie and start baking
  4. Mix up peanut butter cookies and continue baking
  5. Prepare deviled eggs
  6. Put everything in airtight containers and clean up

All of Friday's cooking is for Thanksgiving dinner with my family on Saturday.

Texas Sheet Cake

Texas Sheet Cake:
1 cup butter
1 cup water
2 cups sugar
2 cups all-purpose flour
1 tsp. baking soda
4 Tbsp. cocoa
1/2 cup sour cream
2 eggs, beaten
In a saucepan bring water. cocoa, and butter to a boil. Pour into bowl. Add sugar, flour, and soda. Mix well. Add eggs and sour cream. Mix thoroughly. Pour in to greased 15 1/2 x 10 1/2 sheet pan. Bake at 375 degrees for 22-25 minutes. Top with frosting.
Frosting:
1/2 cup butter
6 Tbsp. milk
4 Tbsp. cocoa
1 lb. powdered sugar
1 tsp. vanilla
In a saucepan bring butter, milk, and cocoa just to a boil. Remove from heat and add powdered sugar, mix well. Add vanilla and beat until it is a good spreading consistency. Icing cake while it is warm. Sprinkle on some nuts or dust with powdered sugar. (optional)

Baking Day 2

Here is what I accomplished in my baking today.
Sausage Cheese Muffins baked and ready to be put in bags for the freezer.

Two pounds of turkey sausage (for the muffins) and four pounds of ground round browning on the stove. I picked up the beef today at Kroger's for $1.63 #!!!

I also made a pot of chicken noodle soup for our supper tonight. What we don't eat I will freeze for another meal. I also made cornbread muffins and plan to freeze the leftovers.

Baking Day: Day 1

I decided to join up with Crystal over at MoneySavingMom and have a Baking Day. I had some cleaning to do this morning so really it has been a baking afternoon. Here is what I have accomplished today.
Chocolate Chip Cookies

Homemade Whole Wheat Bread


Waffles (for the freezer)

5 lbs of split chicken breast (cooked, de-boned and separated into freezer bags for meals)


Tomorrow is my errand running/grocery shopping day, but I plan to do all that in the morning and be back tomorrow afternoon for Day 2 of my baking.

Here is what I plan to make tomorrow:

Breakfast Muffins
Cornbread Muffins (These will be for our supper tomorrow night and I will freeze the leftovers)
Ground Beef (cooked and frozen)

Jewish Apple Cake

Jewish Apple Cake:
3 cups flour
2 1/2 cups sugar
1 cup oil
4 eggs
1/2 tsp salt
1/3 cup orange juice
2 1/2 tsp. vanilla extract
3 tsp. baking powder
Combine these ingredients and mix. Set aside. In another bowl mix the following:
3-4 medium apples peeled and sliced thin
2 tsp.cinnamon
3 Tbsp. sugar
Grease and flour bundt cake pan. Layer beginning with batter then apples, batter then apples, and ending with batter. Bake in a preheated 350 degree oven for 1 1/4 - 1 1/2 hours.

Kitchen Tip Tuesday: Flourless Cookies


My grandma was bring dessert to our family Easter dinner last week and had planned to make cookies. Well when she went to pull the ingredient out for the recipe she realized she had no flour left. So she went in search of recipe and these yummy Flourless Peanut Butter Chocolate Cookies is what she found. They were delicious!!!

Kitchen Tip Tuesday: Peanut Butter Cookies

Peanut Butter Cookies:
3/4 cup peanut butter
1/2 cup butter, 1 stick
1 1/4 cup brown sugar
3 Tbsp milk
1 Tbsp vanilla extract
1 egg
Beat all this together. In a separate bowl mix together
1 3/4 flour
3/4 tsp salt
3/4 tsp baking soda
Add this to the creamy mixture and beat together. Drop onto baking sheet and flatten with fork making crisscross pattern. Bake in a preheated 375 degree oven for 7-8 minutes
This is a favorite here in our house. I made them yesterday and they are half done already. Enjoy!!

Lacey's 5th Birthday

These are some pictures from my sisters birthday party last night. And this is the lovely cake we made.
These flowers were from a silk arrangement that I had used at my wedding reception. The candy's are Valentines M&M's that I picked up at Wal-Mart.

See all the icing on her face :-) She had to lick the bowl!

Honey Bun Cake and A Little Bit of Mitford.

Yesterday I was baking for our weekly family dinner and I thought I would share some pictures and the recipe.
For anyone who has never read or listened to the Mitford series I highly recommend it to you. This is the dramatized version of the first book put out by Focus on the Family Radio Theater. It had been a while since I last listened to this and I wanted something to pass the time while I was in the kitchen.

Honey Bun Cake:
1 Yellow or Butter cake mix (Set aside 1/2 cup of cake mix for filling)
1/4 cup milk
2 sticks butter (margarine) softened
4 eggs
8oz. sour cream
Filling:
1/2 cup cake mix
1/3 cup brown sugar
1/3 cup chopped nuts. I use pecans. (optional)
2 tsp. cinnamon
Icing:
1 cup powdered sugar
1 Tbsp. milk
1 tsp vanilla
Heat oven to 350 degrees, grease 9x13 pan. Beat all cake ingredients together on med speed for 2 minutes. Spread 1/2 batter in the pan. Stir together filling mixture and sprinkle over batter. Spread remaining batter over the top and bake for 40-45 minutes or until golden brown. As soon as you remove the cake from oven, poke with fork all over, mix together icing and drizzle all over cake. Cool 1 hour before serving.

Baking, Babies, and Birthdays!

I have been doing some baking the last couple of days and this is what I accomplished.
1.Chocolate Chip, Peanut Butter, and Peanut Butter Cup cookies
2.Chicken Pot Pie
3.Raisin Bran muffins
4.Blueberry Muffins
Here are a few photos from yesterday.

Yummy!! I took these to my grandmother's for dessert and Eric took the rest to his class at church last night. Alas no more cookies :-)

And this is the mess I left behind. Because of some encouragement from this post
here, I had my sink shined before I went to bed last night.


My weekly ladies bible study is having a baby shower for one of our members and this is my gift. I bought the caddy at a party called Thirty-One that my sister-in-law hosted. It is a company based on Proverbs 31 and is designed to bring woman closer together to encourage one another.












We are going out of town on Saturday for my niece, Anna Grace's, birthday. My sister-in-law bought her a monogrammed apron and chefs hat (also from Thirty-One) so I decided to compliment her gift with the "fixin's" for cupcakes. The basket is actually what all the baby stuff for the shower came in, but since I had the caddy already, I used it for this instead.
