This is a recipe that my mom made up several years ago. We really enjoy this dish with main dishes like: hamburgers, beans and cornbread, or baked chicken.
Cabbage and Veggie Medley
1 head of cabbage, chopped
3-4 carrots, sliced into thin strips
2 cups frozen corn
2 cups frozen or fresh broccoli florets
any other veggie you would like to add in
salt and pepper
4 Tbsp butter (melted) or olive oil
Toss all of your veggies together and place in a greased 9x13 glass dish. Salt and pepper to taste then pour butter or olive oil over the top and cover with foil. Bake in a 450 degree oven for about 1 hour. Pull out and stir after cooking 30 minutes then resume baking.
